A Unique Celebration of the Flavours and Memories of India’s Iconic Highway Dhabas
Jaipur. Hilton Jaipur is presenting “Dhaba Diaries: Flavours of the Highway,” a special food festival that celebrates the authentic flavours, vibrant culture and nostalgic memories associated with India’s iconic highway dhabas. The culinary festival will be hosted at Aurum, the hotel’s all-day dining restaurant, from July 24 to August 2, 2026.
Inspired by the lively culture, traditional cuisine and warm hospitality of dhabas located along India’s famous highways, the festival brings the flavours of memorable road journeys and cherished travel experiences to the table in a contemporary setting.
The festival will feature dishes inspired by renowned highway dhabas from across regions including Punjab, Rajasthan, Awadh, Central India and Bihar. Guests will have the opportunity to savour popular flavours from these iconic routes while experiencing India’s rich culinary heritage in an elegant and modern ambience.
The experience will go beyond food, with live cooking stations, traditional presentations and interesting stories behind several dishes. The festival has been designed to evoke memories of road trips, family journeys and memorable stops at roadside dhabas.
The specially curated menu includes a wide selection of vegetarian and non-vegetarian delicacies such as Murthal Stuffed Aloo Paratha with White Butter, Amritsari Kulcha with Pindi Chole, 12-hour Slow-Cooked Dal Makhani, Highway Butter Chicken, Safed Maas, Handi Mutton, Truck Driver Chicken Curry and Saoji Mutton Curry, among several other regional specialities.
At the live tawa counter, guests can enjoy freshly prepared Paneer Bhurji, Keema Pav, Egg Bhurji and other popular favourites. Traditional Indian breads, including Rumali Roti, Missi Roti and Khamiri Roti, will also be served.
The dessert selection will offer a delicious conclusion to the feast with traditional favourites such as Desi Ghee Jalebi, Sikora Phirni, Highway-Style Malpua, Moong Dal Halwa, Shahi Tukda, Balushahi, Imarti and Tilkut.
